It’s been a really rough couple of weeks. Well, a really tough couple of months, but a SUPER tough couple of weeks.

I’ve been having some serious family problems and my mental health took a hit. My physical health followed. But enough of that- I’m trying to get through it.

I watched Fat Sick and Nearly Dead. I’ve thought about juice fasting in the past, but never really had the motivation to go through with it. So I’m going to try it for the next 10 days. Today’s day 1, and although it’s only been a few hours, I feel awful.

It’s not that I’m hungry right now, it’s just that I think I should be eating solid food. And I want to. So. Bad. 10 days didn’t feel so long when I thought about it, but now that I’m actually doing it, it feels like a huge undertaking.

Right now, I weigh 230 lbs. Let’s see how I feel and how much I weigh at the end of this.

Eat this: Quinoa

Pronounced keen-wah, this is a lesser known grain that is actually way healthier for you than just having pasta. It provides a whackload of protein along with many other beneficial nutrients. It’s almost like a cous-cous, but I honestly like it better. Seriously this is so good for you so try adding it to your meals as a protein, grain or use it in a salad.

When I cook quinoa I usually make it this way:

  1. Follow the package’s directions according to how much you want to make. Whatever amount of water it tells you to use, only add half this amount of water and the other half replace with chicken broth (or some sort of vegetarian replacement if you want). It adds a much better taste to the grain. 
  2. Note: the packages usually tell you to wash the quinoa first to get rid of a bitter coating, but if you do the chicken broth thing it’s not really necessary because it covers that up.
  3. Bring to a boil in a saucepan over medium-high heat and add sun dried tomatoes, green onions, or whatever you can think of.
  4. Chickpeas, feta cheese and other vegetables are good too.
  5. Simmer for 20 minutes covered (super easy to make and you can just leave it and come back to it later).
  6. Serve :)

I tried this stuff at the commissary at work. VERY tasty! I’m still a big couscous fan, but this stuff is really good, too. Try adding juice instead of some of the water or broth. I add lemon juice and garlic, and it’s fantaaaaastic.

For the past four or five days, we haven’t had any internet at home. No one wanted to call Time Warner, so we all did nothing until my mom caved last night and called to have someone come repair it. But now I’m back! Hopefully no more extended tumblr breaks.

Last night I made spaghetti squash for the first time in my life, and let me just say this: it is crazy good. I don’t even like squash, but spaghetti squash tastes nothing like what I expected, it’s super fun to make, and it’s quite good for you.

And here’s the amazingly delicious recipe I used last night.

I sauteed zucinni, onion, garlic, and roma tomatoes for my spaghetti squash.

Seriously people- try this at least once in your life. If you don’t happen to like squash much, which is true in my case, let me tell you it tastes nothing like any squash I’ve had before. After having this, I don’t think I’ll ever go back to regular pasta. Make sure you season it well or have a wonderful sauce on hand though, as it can be a bit bland as is.

Salad with egg, cheese, and ranch dresing 200 cal.
Baked potato with sour cream and cheese 300 cal.
Low fat strawberry kefir 140 cal.
Cheesecake 400 cal.
Bread with cinnamon butter 200 cal.

I haven’t finished drinking water yet, so I know I can manage the extra cup tonight.

I didn’t eat too healthy today, but I really liked that salad. I know as far as salads go, for the small portion I had, it wasn’t the healthiest. But I was pretty full after I ate it, and as a replacement for, say, a bacon cheeseburger, it did the trick.

I tried kefir for the first time in my life, and I’m not too impressed. It was so tart! Really just too unpleasant for me- I’ll stick with yogurt after I finish the bottle I bought.

ANYONE ELSE PUMPED FOR HAPPY POTTER?! My friend has been keeping my place in line for 7 hours so far. I didn’t know she was doing that, and now I feel a little bad, because I would have at least brought her a snack, or something.

Also, a lot less pain from my tongue piercing! It’s been a week exactly, and I’m obviously able to eat more than soup now, which is great. I just need to pick my food options a little better.
